Before bed, simply fill a jar or bowl with grated Pink Lady® apple, coconut chips, oats, vanilla extract and pour over unsweetened coconut milk. Then give the overnight oat mix a really good stir, cover or screw on the lid and place in the fridge overnight.

To prepare the overnight oats, place the grated apple into a large container with a lid. Add the jumbo oats and coconut chips and stir. Pour over the coconut milk drink and add the vanilla extract. Stir thoroughly. Place the lid on the container and leave in the fridge overnight.

In the morning, remove the overnight oats from the fridge and give them a good stir. Divide the oats between two glasses and top with fresh slices of Pink Lady® apple, a spoonful of coconut yoghurt and the coconut chips.
