If there is anything that is likely to cheer you up on a dreary morning then it is a colourful smoothie bowl! People often pass up apples for their smoothies in favour of softer fruit, but Pink Lady® apples make a fantastic addition to a beautiful pink smoothie bowl.
They add sweetness, fibre and plenty of juice, not to mention the flecks of pink from their beautiful skins. If you think that a smoothie on its own won’t be filing enough for breakfast then adding some granola will certainly keep you going for longer. The recipe for the granola makes enough for 3 or 4 bowls so you will have some left over for the next day too. If you want to change it up a bit then the granola is also great with chopped apple and some yoghurt or eaten on its own as a snack.
I like to make up double the quantity of granola at the beginning of the week and then you will have enough to last right the way through to the weekend. If you are in a rush in the morning and you don’t have time to sit down with a smoothie bowl then just put the smoothie in a flask and take a small pot of the granola with you. Because it clumps together well it is easy to eat on the go. However you eat it, you won’t find any bland breakfasts here!
Full preparation

To make the granola first chop the Brazil nuts into small pieces.

Toast the Brazil nuts, pumpkin seeds, flax seeds and oats in a dry frying pan for about 3-4 minutes or until you can start to smell the fragrance of the nuts.

Add the coconut oil, syrup and cranberries and toast, stirring frequently until the pumpkin seeds are starting to pop.

Turn out onto a plate to cool.

Once cool break up into clusters.

For the smoothie core the apples, but leave the peel on. Chop the banana and hull the strawberries. Place them all in a blender along with the yoghurt and agave and blend until smooth.

Pour into bowls, top with slices of apple and some granola. Enjoy!
