Fluffy Apple Pancakes
This recipe creates wonderfully fluffy pancakes. When you blend the apples and milk together as part of the cooking method, this creates air in the mixture which will make the pancakes puff up when cooking, resulting in perfect fluffy apple pancakes.
The pancakes are apple flavoured and we recommend serving them with a thinly-sliced Pink Lady® apple for an extra hit of deliciousness.
Prepare your pancakes by coring two Pink Lady® apples and roughly chopping them, blitzing them in a blender along with 200ml of milk.
Meanwhile, whisk two eggs with 100g of flour with an electric whisk if you have one, but this can be done manually too. Gradually add the milk to the mixture as you go.
Once done, heat some butter in a non-stick pan and once the butter is melted, add a ladleful of your mixture and fry for a minute. Flip and fry for another minute. If you have an apple shaped cutter you can cut out your pancakes into apple shapes, or just serve them as they are.
This recipe makes ten pancakes. Serving suggestion: Pink Lady® apple, thinly-sliced, with your choice of caramel sauce, honey or yoghurt.

Blitz the apples and milk together in a blender until completely smooth. The blending of the apples and milk together creates air in the mixture which will make the pancakes puff up when cooking.

Whisk the eggs and the flour together with an electric whisk. Gradually whisk in the apple and milk mixture.

Heat a non-stick pan and melt a little of the butter to grease the pan.

Pour in a ladleful of the pancake mixture and fry for 1 minute on either side. Keep warm while you cook the rest of the pancakes, adding a little of the butter each time if needed.

Serve with thinly-sliced Pink Lady® apples and your choice of additional toppings, and eat immediately.
Tip: If you have one, use an apple-shaped cookie cutter in the pan to make your pancakes apple-shaped as well as apple-flavoured!
