Gut health is important at all times of life, but it can be especially important during menopause.
This delicious fibre-providing breakfast option boasts no less than 10 different plants, which will leave you feeling satisfied and encourage your gut microbes to thrive.
With a hint of sweetness from the Pink Lady® apples, plenty of texture from the seeds and lots of spices for flavour, this is the perfect way to start any day. Pair with some Greek yoghurt and an extra sprinkle of cinnamon a breakfast that will keep you going until lunchtime.

Heat the oven to 180°C/fan 160°C/gas mark 4. Line a 20 x 20cm baking tray with baking paper.

In a medium sized bowl, mash the bananas. Then crack in the eggs and stir well to combine. Add the Pink Lady apple, maple syrup, spices, bicarbonate of soda, lemon zest and juice and olive oil.

Add in the ground almonds, ground flaxseeds and 2 tbsp of the mixed seeds. Mix until fully combined.

Tip the mixture into the prepared baking tray and distribute evenly, using the back of a spoon. Scatter over the remaining seeds and bake in the oven for 20-25 minutes until starting to brown on top. Keep an eye on it to make sure it doesn’t burn.

Remove from the oven and leave to cool before cutting into 8-10 portions.
