This Pink Lady® apples and rice pudding recipe is perfect for all the family, and what’s more you can modify the recipe to suit your preference. If someone in the family likes their rice pudding a little runnier, simply add more milk into their bowl when you’re serving it up.
How to Make Pink Lady® Apple Rice Pudding
You could use rice pudding pots bought from the shop, but making your own is so much more satisfying and it's easy to do. All you need is a few spices you can pick up at most supermarkets, milk and rice. We've used coconut milk in this recipe and Thai sticky rice, or pudding rice. Follow the instructions below to make your own rice pudding.

Place the rice, milk drink, coconut milk, spice, vanilla and sweetener in a saucepan.

Core and finely chop 1 apple and add to the pan. Bring to a simmer, stirring, then leave over a low heat for 35-40 mins until the rice is tender. Cool and chill if making ahead, or spoon into serving dishes immediately.

To serve, core and chop the remaining apples. Sprinkle over the pudding and top with the toasted coconut.

Tip: if you prefer a runnier rice pudding, stir in some extra milk drink towards the end of cooking, or into the chilled rice pudding.
