Although it won’t solve all your symptoms, our Pink Lady Menopause Cake is an excellent source of phytoestrogens which have been shown to help some women (not all!) with hot flushes. Either way, it’s high fibre, low sugar and tastes delicious.
Full preparation

Turn your oven on to 180 degrees.

Line a loaf or cake tin with parchment paper.

Mix the flour, ground flaxseeds, walnuts, sugar, baking powder, baking soda and spices in a large mixing bowl. Pour in the olive oil, whisked eggs and grated apples and carrots.

Combine well and spoon the mixture into the baking tin, smoothing it around to make sure it’s even.

Put in the oven for around 30 - 40 minutes (test after 25 mins) or until a knife inserted into the middle comes out clean. The cake should be lightly browned on top.

Leave to cool, remove from baking tin and cut into slices. Delicious served with Greek yoghurt, some extra fruit and a light dusting of cinnamon. Will keep for 2-3 days in an airtight container (suitable for freezing too).
