Yes, Pink Lady® apple works a treat on a pizza. Try it for yourself – it's highly recommended.
Full preparation

Scatter a little of the flour over a clean surface and put the rest in a bowl with the yeast, sugar and a pinch of salt and mix together. Make a well in the centre and add the oil and most of the warm water (if the dough is too stiff, add the rest). Bring the mixture together and tip onto the floured surface and knead until smooth and silky.

Form into a ball and put into an oiled bowl. Cover with a damp cloth and put in a warm place to rise for about 1 hour or until double in size.

Meanwhile, put the apples into a large pan with 2 tbsp water. Cook, covered, on a medium heat for 4 minutes. Remove the lid and cool.

Preheat the oven to 200ºC/fan 180ºC/gas mark 6 and lightly oil 2 large baking trays.

Tip the dough onto a lightly floured surface and knead briefly, then divide into 12 equal sized pieces. Form each piece into a ball and put onto the baking trays, leaving plenty of space around each one. Push and ease each ball into a 6cm round.

Mix the grated Parmesan with the parsley and add a little to the top of each pizza.

Divide the apple between them and crumble over the feta. Scatter over the pine nuts, season with black pepper and drizzle over a little oil. Bake for about 10 minutes until golden and crispy.
