These beautiful open-faced sandwiches are popular in Scandinavia. Traditionally made on dark rye bread, you can top them with a variety of vegetables or smoked and pickled fish. This version is perfect for a quick snack or afternoon tea, with crisp, refreshing cucumber, radishes and Pink Lady® on cream cheese, finished with floral pink peppercorns.

Toss the Pink Lady® apple slices with the lemon juice.

Peel long, thin strips lengthways from the cucumber using a potato peeler until you reach the seeds in the centre. Discard the seeds and put the cucumber strips in a bowl of cold water.

Finely slice the radishes and add to the bowl with the cucumber.

Drain the cucumber and radishes well, and pat dry with kitchen roll.

Spread the rye bread with the cream cheese.

Now comes the artistic part: arrange overlapping layers of cucumber, radishes and Pink Lady® apple all over the bread. Crush the pink peppercorns with your fingertips, and scatter over the sandwiches.

Serve immediately: you can cut the crusts off for a neater shape or leave them on for a more rustic look.
